We used the traditional components of Thieboudienne (also known as Ceebu Jen), a dish from Senegal which translates into “rice and fish” in this hearty recipe. Fish fillets stuffed with an herb mixture are seared in peanut oil and then finish cooking atop a tomato vegetable stew. The fish and vegetables are served with rice seasoned with tomato broth from the stew. This recipe was inspired by microcredit clients.
